First up, we have Elve’s legendary red peanut patties, but this time, they’re shaped like the state!
This year’s fair introduced the barbecue parfait, but 2016 introduced the state to this Roast Beef Sundae. It’s two scoops of mashed potatoes, swimming in gravy, and topped with roast beef, cheese, and a cherry (tomato) on top. That’s a side of cornbread to boot.
Want another meat treat? Another vendor sells layers of mashed potatoes, beans, barbecue sauce, and your choice of pulled pork, chicken, beef, or ham.
One more? Here’s the Chicken Enchilada Parfait, a sample version of which is pictured.
Another sample size, we have the adorably-named Snickers Salad. It’s fresh, chopped apples, mini Snickers bars, and whipped cream. No part of that is a vegetable, but does that matter?
No, it does not.
Also new, the Twisted Bread Cone Sandwich is more a soup of sausage and gravy in a bread bowl.
All the pizza flavor with none of the mess, we have Garlic Knots.
More carbalicious, Pat’s Kitchen offers what they call Indian Fry Bread, plate-sized deep-fried bread that can be topped with cinnamon and sugar, strawberries and cream, or tacos (pictured)

Another mixup that works, we have this Maple Bacon Funnel Cake.
The oddly-named Bacon-Wrapped Jo Jo Potato is a potato wedge, surrounded by a strip of bacon, and deep fried. It’s a great combination that was at least one reviewer‘s fair favorite. Available with either cheese or ranch on the side.
Want more meat and less carbs? Here’s Deep Fried Sweet and Sour Ribs, which are first smoked, then deep-fried, and left to marinate in sweet and sour sauce.
A little more like its name, the Fried Caramel Pretzel Brownie is a deep-fried brownie on-a-stick that’s then dipped in caramel and coated with peanuts.
Want another deep-fried dessert, served impaled on a mini tree? Here’s Deep Fried Peach Pie, new this year. Other vendors offer the returning favorite flavors of apple, cherry, apricot, chocolate, and coconut pies.
Also on a stick? Tea! Flavors include sweet tea, raspberry tea, and Arnold Palmer.
There’s also this Chocolate-Covered Corn Dog, with sprinkles, and served on a stick.
And the Maple Bacon Corn Dog, featuring a sweet cornbread coating and “everything you probably ever wanted in a fair food.” Or out of life. Y’know.
Once more, onto the breach stick, we have Dough-E-Oreos, which are Oreos rolled into cookie dough balls, deep fried, skewered, and smothered with powdered sugar. Three per order. Anyone else feel like they’re missing out by not calling them D’Oreos?

Not new but still worth a look, we have the Big Dog, a two-foot long, two-and-a-half pound hot dog. It’s $15 plain, $18 with chili and cheese, and $20 with chili, cheese, cheese sauce, coleslaw, onions, jalapeños, and bacon.
